Lime Vanilla Crunch Pie

(Makes 10 servings)

Ingredients:

1 cup cornflake crumbs
¼ cup flaked coconut
2 tablespoons honey
2 tablespoons margarine, melted
1 quart lime or orange sherbert, softened
1 pink fat-free vanilla ice cream, softened

Instructions:

In a bowl combing cornflake crumbs, coconut, honey, and margarine. Mix well. Press mixture into bottom and up sides of a 9-inch pie plate. Freeze for 10 minutes to set crumb shell.

Using the back of a spoon or spatula, carefully spread sherbet as evenly as possible on the crumb shell and up the sides to form another shell. Place in freezer for 15 minutes or till firm.

Spoon ice cream into center to fill the pie. Cover and freeze about 2 hours or till firm.

To serve, cut into wedges. Serve with your favorite fruit sauce, if you like.
